对总膳食研究中我国4个地区(北方一区、北方二区、南方一区、南方二区)的食物样品进行分析, 并计算出每人每日脂肪和脂肪酸的摄入量。脂肪摄入量,北方一区城市和农村分别为73.3g、49.7g北方二区城市和农村分别为65.5g、28.8g,南方一区城市和农村分别为58.3g、41.0g,南方二区城市和农村分别为53.8g、55.3g。膳食中主要的饱和脂肪酸为棕榈酸(16:0)和硬脂酸(18:0);主要的单不饱和脂肪酸为油酸(18:1),但是在两个南方地区的膳食中, 芥酸(22:1)的含量也较高。n-6系列的多不饱和脂肪酸(PUFA)主要是亚油酸(18:2),n-3系列的 PUFA 主要是(2α-亚麻酸。4个地区膳食中二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)含量都很低。膳食饱和脂肪酸:单不饱和脂肪酸:多不饱和脂肪酸的比值分别是:北方一区城市1:1.3:2.0,农村1:1.3:2.1;北方二区城市1:1.8:1.1,农村1:1.5:2.4南方一区城市1:1.6:0.7,农村1:1.8:0.8;南方二区城市1:1.6:0.7,农村1:1.6:0.7。从膳食脂肪及脂肪酸分析结果可以认为,目前我国居民膳食脂肪及脂肪酸构成基本合理,但由于经济发展水平,饮食文化上存在较大差异,在脂肪摄入方面。对不同地区应分别进行膳食指导。
