柿子是我国的主要果树之一,柿果味甜,营养丰富,既可生食,又可加工成柿饼、柿干、柿醋、柿酒。但涩柿品种柿子刚采收时,由于柿果组织细胞中含有较多的可溶性单宁物质,人们在食用时,会感到很强的涩味,所以必须经过脱涩处理。常用的脱涩方法有以下几种:
