莲藕有中国莲和美国莲两种。按栽培目的中国莲又分为藕莲、子莲、花莲3种,适宜在中性和微酸性的土壤中生长。目前在生产上栽培的莲藕主要是藕莲(食用藕),早熟品种有“白花藕”、“六月抱”和“花藕”等,中熟品种有“慢藕”、“美仁红藕”等,晚熟品种有“小暗红藕”、“湖藕”等,可因地制宜组配栽培,以求得好的种植效益。藕莲的栽培技术要点于下:
