叉蕊薯蓣与其变种粉背薯蓣于游离氨基酸组分方面无明显的差异,二者的含硫氨基酸蛋氨骏和胱氨骏、杂环氨基酸脯氨酸和色氨酸以及芳香族氨基酸苯丙氨酸的含量都很低或未检出,二者中精氨酸含量都比其它氨基酸的含量高得多,天冬氨酸、丝氨酸及谷氨酸的含量也比较高。此外,粉背薯蓣根茎中绝大多数游离氨基酸含量都比叉蕊薯蓣的为高。以上结果与它们根茎中蛋白质氨基酸的分析结果存在相似性。
There was no significant difference in the free amino acid composition between the dioscorea yams and their varieties of powdered dioscorea. Both of them contained the sulfur-containing amino acids oxanamine and cysamine, the heterocyclic amino acids valine and tryptophan and the aromatic amino acid phenylalanine. The content of acid is very low or not detected. The content of arginine in both is much higher than that of other amino acids, and the content of aspartic acid, serine and glutamic acid is also relatively high. In addition, the majority of free amino acid content in the roots of Dioscorea zingiberensis is higher than that of Dioscorea. The above results are similar to the analysis results of protein amino acids in their rhizomes.
