以黑豆种子为材料,提取非酶促保护物质,并对其进行了抗氧化、抗衰老能力检测与分析。结果显示:黑豆皮红色素(17.3600%)对DPPH的清除率高达93.6000%,薯蓣皂苷(4.8492%)与谷胱甘肽(803.3μg/g)对DPPH与OH有明显的清除率,多糖(7.2270%)对O2-与OH的清除率分别为47.7100%与68.1600%,它们都随着其浓度的升高清除率逐渐增强;研究表明:黑豆富含非酶促保护物质,具有较强的抗氧化与抗衰老能力,可用来进行保健品、功能食品及药物的研制与开发。
Black bean seeds were used as materials to extract non-enzymatic protective substances, and their anti-oxidation and anti-aging ability were tested and analyzed.
