洋葱富含两类主要化学成分,即类黄酮和烷基半胱氨酸硫氧化物(ACSOs),其中类黄酮有2个亚组花色素苷和黄酮醇。这些化合物对健康有益,作用包括抗癌、抗血小板聚集、抗血栓形成、平喘、抗菌等。本文回顾了有关洋葱的生物化学及其它研究资料,并与大蒜的相关资料进行了比较。
Onion is rich in two major classes of chemical constituents, flavonoids and alkyl cysteine sulfur oxides (ACSOs), of which the flavonoids have two subgroups of anthocyanins and flavonols. These compounds are good for health and their effects include anti-cancer, anti-platelet aggregation, anti-thrombosis, antiasthmatic and antibacterial activities. This article reviews biochemical and other research data on onions and compares them with data on garlic.
