富硒豆的培养及其硒含量分析

为了开发新型富硒功能食品———富硒豆,研究了绿豆和大豆在不同含硒溶液中发芽生长情况。结果表明,20.00#g.mL-1的高浓度硒培养溶液会对绿豆和大豆的发芽生长产生明显毒性,且四价硒毒性更强,表现在四价硒培养的绿豆和大豆发芽率较六价硒低;分别在0~3.00#g.mL-1和0~6.00#g.mL-1的六价硒溶液培养下,绿豆和大豆发芽生长情况基本良好。采用氢化物原子荧光光谱法作外标标准曲线,并测定培养后的绿豆和大豆硒含量,结果20#g.mL-1的高浓度硒溶液培养的豆含硒量最高,为75.0273~102.2612#g.L-1。而在0~6.00#g.mL-1的六价硒培养条件下,绿豆和大豆的含硒量分别为7.5002~69.8483#g.L-1和11.1737~58.3926#g.L-1,且该硒含量范围适合富硒功能食品硒含量标准。 In order to develop a new type of selenium-enriched functional foods --- Se-enriched beans, the germination and growth of mung bean and soybean in different selenium-containing solutions were studied. The results showed that 20.00 # g.mL-1 high concentrations of selenium culture solution will have obvious toxicity to germination and growth of mung bean and soybean, and the toxicity of tetravalent selenium is stronger. The germination rate of mung bean and soybean cultivated by tetravalent selenium is six The price of selenium was low; germination and growth of mung bean and soybean were basically good under 0 ~ 3.00 # g.mL-1 and 0 ~ 6.00 # g.mL-1 hexavalent selenium solution respectively. The hydride generation atomic fluorescence spectrometry was used as the external standard curve, and the content of selenium in the mung bean and the soybean was determined. The results showed that the selenium content of soybean cultivated in high concentration selenium solution of 20 # g.mL-1 was the highest, 75.0273 ~ 102.2612 # gL-1. The selenium content of mung bean and soybean was 7.5002 ~ 69.8483 # gL-1 and 11.1737 ~ 58.3926 # gL-1, respectively, and the range of selenium content was suitable for 0 ~ 6.00 # g.mL- Se-enriched functional foods selenium content standards.
