目的通过量化分级管理的实施,在了解锦州市凌河区餐饮业现状的基础上探索基层餐饮业量化分级的管理方法。方法开展对食品监督管理人员和锦州凌河区565家餐饮业管理者的培训,在经营单位自行整改后由监督管理部门逐一现场进行量化分级评审。结果量化后的餐饮业卫生条件明显改善,餐饮经营者责任意识和从业人员饮食安全意识有很大提高,量化合格536家(94.87%)。结论基层监督管理部门需因地制宜的开展量化分级工作,细化标准,合理配置卫生资源,推进量化分级管理工作的长期发展,进而提高整个餐饮行业的卫生质量,有效地预防和控制食物中毒的发生。
Objective To explore the management methods of quantitative classification of grassroots catering industry based on the understanding of the status of catering industry in Linghe District of Jinzhou City through the implementation of quantitative management. Methods To carry out training on food supervision and management personnel and 565 catering industry managers in Linghe District of Jinzhou. After the self-rectification by the business units, the supervision and management departments conducted quantitative and appraisal on the spot. Results After the quantification of the catering industry, the sanitary conditions were significantly improved. The sense of responsibility of catering operators and the awareness of employees on food safety were greatly improved. 536 were qualified (94.87%). Conclusion The grass-roots supervision and management departments need to carry out quantification and grading according to local conditions, refine standards, rationally allocate health resources, and promote the long-term development of quantitative and hierarchical management so as to improve the health quality of the entire catering industry and effectively prevent and control food poisoning.
