合肥市近郊菜园生产的13种蔬菜中,矿质营养元素含量水平是Ca>Mg>Fe>Zn>Mn>Cu。营养元素含量变动范围大致为:Ca、Mg1.0~10.0g·kg-1,Fe70~250μg.g-1,Mn15~180μg·g-1,Zn30~120μg·g-1,Cu10~30μg·g-1。矿质营养元素含量丰富的蔬菜有苋菜、蕹菜、芹菜、菠菜等。叶茎类蔬菜矿质元素含量高于果菜类蔬菜,不同蔬菜的含量差异达5~7倍甚至20倍以上,而同种蔬菜不同样品之间含量差异多在1倍以内。

Nutrients rich in mineral elements of vegetables are amaranth, vegetables, celery, spinach and so on. The contents of mineral elements in leafy and stalked vegetables are higher than those in fruits and vegetables, the content of different vegetables is up to 5 times to 7 times or even more than 20 times, while the content differences among different samples of the same kind of vegetables are more than 1 times.
