野生与人工养殖瓦氏黄颡鱼肌肉营养成分及品质评价

对野生及人工养殖瓦氏黄颡鱼的肌肉营养成分和营养品质进行了分析比较。结果表明,野生瓦氏黄颡鱼肌肉中水分显著高于人工养殖瓦氏黄颡鱼(P<0.05),而粗脂肪含量显著低于人工养殖瓦氏黄颡鱼(P<0.05),粗蛋白和粗灰分含量两者无显著差异(P>0.05)。野生和人工养殖瓦氏黄颡鱼氨基酸组成基本一致,均含有17种以上氨基酸(色氨酸含量较低未测定)。除酪氨酸外,其余各项氨基酸指标均无显著差异(P>0.05)。氨基酸平衡性分析结果表明,瓦氏黄颡鱼氨基酸组成符合FAO/WHO标准,具有较好的平衡性,蛋白品质较好。野生瓦氏黄颡鱼较养殖瓦氏黄颡鱼ω3脂肪酸高。瓦氏黄颡鱼肌肉贮存脂肪高,是一种较优的经济鱼类。 Nutritional qualities and muscle nutrients of wild and cultivated Valvoline were analyzed and compared.
