以低值淡水鱼骨为钙的来源,运用正交试验研究了复合氨基酸与鱼骨粉中钙离子的螯合工艺。正交试验结果显示,最佳螯合条件为复合氨基酸与钙离子的质量比3∶1(mg∶mg),pH值8,反应时间70min,反应温度80℃,此时螯合率为75.23%,并用红外光谱对其进行了分析。
Low-value freshwater fishbone as a source of calcium, the use of orthogonal experimental study of the chelation of calcium ions in fish meal with composite amino acids. The results of orthogonal test showed that the best chelating conditions were the mass ratio of amino acid to calcium ion: 3:1 (mg: mg), pH value of 8, reaction time of 70 min and reaction temperature of 80 ℃. The chelation rate was 75.23% , And analyzed by infrared spectroscopy.
