用清除1,1-二苯基-2-苦基苯阱(DPPH)自由基能力表示腐乳提取物的抗氧化能力,中国市售15种腐乳的水提取物的抗氧化活性为11.72%-100.80%,ACE的抑制活性为0.71-1.94mg/mL。
The antioxidant activity of the preserved bean curd extract was expressed as the free radical scavenging ability of 1,1-diphenyl-2-picrylide trap (DPPH), and the antioxidant activity of 15 kinds of Chinese preserved bean curd water extracts was 11.72% -100.80 %, ACE inhibitory activity of 0.71-1.94mg / mL.
