为了寻找安全的天然抗氧化剂,以火龙果花为研究对象,以乙醇作为提取溶剂,对火龙果花进行加热回流提取,以体外抗氧化试验为活性评价手段,测定其中的总黄酮含量,利用DPPH法、水杨酸法、邻苯三酚法、硫氰酸铁法、普鲁士蓝法从5个方面测定样品的抗氧化活性,以化学合成的脂溶性抗氧化剂TBHQ为阳性对照品。研究不同浓度下火龙果花中黄酮类化合物的抗氧化活性。结果表明:火龙果花总黄酮含量为2.62mg/mL,黄酮类化合物对DPPH·的清除能力与特丁基对苯二酚(TBHQ)相当,清除·OH的IC50为0.57mg/mL,清除超氧阴离子的IC50为1.41mg/mL,抑制脂质过氧化的IC50为1.80mg/mL,还原力相对较弱。研究表明火龙果花中黄酮类化合物具有较强的抗氧化活性,可作为天然抗氧化剂推广应用。
