GC-MS分析测定5种植物油中脂肪酸成分研究

采用气相色谱-质谱联用(GC-MS)方法测定了5种植物油(花生油、玉米油、葵花籽油、大豆油和茶籽油)中脂肪酸组成。研究了植物油经皂化、甲酯化处理后,用GC-MS方法测定其脂肪酸含量,结果通过NIST05标准谱库检索确定脂肪酸组成,并利用峰面积归一化法确定各成分的百分含量。研究结果表明,5种植物油中,花生油的油酸含量最高(42.81%),但总不饱和脂肪酸(UFA)的含量最低(79.54%);玉米油、葵花籽油和大豆油的总UFA均在80%以上;茶籽油的α-亚麻酸和总UFA含量均为最高,分别占53.06%和90.59%。 The fatty acid composition of 5 vegetable oils (peanut oil, corn oil, sunflower oil, soybean oil and tea seed oil) was determined by gas chromatography-mass spectrometry (GC-MS) The saponification and methyl esterification of vegetable oils were studied. The content of fatty acids was determined by GC-MS. The composition of fatty acids was determined by NIST05 standard library search. The percentage of each component was determined by peak area normalization. The results showed that peanut oil had the highest oleic acid content (42.81%), but the lowest content of total unsaturated fatty acid (UFA) (79.54%). The total UFA content of corn oil, sunflower oil and soybean oil was 80%. The content of α-linolenic acid and total UFA in tea seed oil were the highest, accounting for 53.06% and 90.59% respectively.
