利用区带毛细管电泳对乳粉中三聚氰胺进行定性和定量测定,同时研究了尿素、甘氨酸、亚硝酸钠和硝酸铵这4种非蛋白氮对毛细管电泳分离乳粉蛋白质的影响。结果表明：利用较优分析条件分离含有三聚氰胺的乳制品,三聚氰胺在11min左右有一明显峰型,迁移时间和峰面积的标准偏差分别为0.39%和2.87%,三聚氰胺的最低检出限为2.78mg/L,回收率介于98.2%～102.1%之间。乳蛋白保留时间介于20~35min之间,不与三聚氰胺的峰型重叠。利用同样的分析条件,尿素、甘氨酸、亚硝酸钠和硝酸铵无峰型且不对区带毛细管电泳分
