维生素C在食品中能起抗氧化剂作用,即它在一定时间内能防止油脂变酪。维生素C是水溶性的,为此,笔者首先通过吸收光谱曲线法确定维生素C的水溶液的最大吸收波长为267nm,进而通过工作曲线法快速测定蔬菜水果中维生素C的含量,本方法与常规方法比较,具有快速、准确、简便、试剂易得等优点。方法的RSD为0.75%~0.84%,回收率为99.7%~100.1%。
