大米作为我国两大主食原料之一,具有健脾养胃、益精强志、聪耳明目的功效,被誉为“五谷之首”。大米加工制品的种类较多,很受广大消费者的喜爱,但是作为饮料产品目前还很少。大米与其他粮食作物相比,所含粗纤维较少,淀粉粒特小,如果能以大米为原料进行发酵等方法加工,并以营养、口感俱佳的健康饮料在市场上出现,将成为其他饮料无法取代的新一代产品。
