随着研究的日益深入,膳食纤维的定义进一步扩充,分析方法也有了一定的发展。本文综述了膳食纤维定义的演变、常用分析方法及不同分析方法测定值的比较;并对几种不消化碳水化合物(抗性淀粉、果聚糖、多聚葡萄糖等)的分析方法,在总膳食纤维分析时,能否作为AOAC酶重量法的补充进行了说明。
With the deepening of the research, the definition of dietary fiber has been further expanded, and the analytical methods have also been developed. This article reviews the evolution of dietary fiber definitions, common analytical methods, and comparison of measured values by different analytical methods. In addition, several analytical methods for indigestible carbohydrates (resistant starch, levan, polyglucose, etc.) Whether the fiber analysis can be added as an AOAC gravimetric method is explained.
