目的:对超市熟食制品微生物的污染情况进行调查,根据调查结果采取相关对策,最大限度的预防食源性疾病的发生。方法:选取xx区销售熟食制品的超市共计10家作为研究对象,提取在超市中正常销售的熟食制品共计15类(200份)作为研究对象。参照我国现行《食品卫生微生物学检验肉与肉制品检验》中的相关规范展开检验作业。参照《熟肉制品卫生标准》中的相关要求对检测样本的微生物污染情况进行评估。结果:15类(200份)熟食制品中,共检出合格熟食制品73份,检出合格率为36.50%,未合格率为63.50%。共32份熟食制品中检出致病菌,检出菌株数为45株。45株致病菌中,31株为金黄色葡萄球菌,检出率为68.89%,明显高于其他致病菌检出率,对比差异显著,P<0.05。结论:xx区超市熟食制品微生物污染问题严重,存在可能诱发食源性疾病的致病菌污染问题,需要从技术基础设施的完善、从法律管理措施的落实、以及从技术标准的提升方面入手,加以改进,权利提高超市熟食制品卫生检验的合格率。
Objective: To investigate the microbial contamination of cooked food products in supermarkets and to take relevant measures according to the survey results to prevent foodborne diseases to the maximum extent. Methods: A total of 10 supermarkets selling delicatessen products in xx area were selected as research objects, and a total of 15 categories (200) of delicatessen products that were normally marketed in supermarkets were selected as research objects. Reference to China’s current “food hygiene microbiology test of meat and meat products” in the relevant norms to start the test operation. Reference to “cooked meat hygiene standards” in the relevant requirements of the test sample microbial contamination assessment. Results: Of the 15 categories (200) cooked food products, a total of 73 qualified cooked food products were detected, with a pass rate of 36.50% and an unqualified rate of 63.50%. A total of 32 cooked food products detected pathogens, the number of strains detected was 45. Of 45 pathogenic bacteria, 31 strains were Staphylococcus aureus, the detection rate was 68.89%, which was significantly higher than that of other pathogenic bacteria, the difference was significant (P <0.05). Conclusion: The microbial contamination of delicatessen products in supermarkets in xx district is serious, and there is a problem of pathogen contamination that may induce foodborne diseases. The improvement of technical infrastructure, the implementation of legal management measures and the promotion of technical standards are needed. To be improved, the right to improve the supermarket cooked food hygiene inspection pass rate.
